that kidney bean soup recipe I promised

1 lb ground sirloin (or leave it out:-)

1 medium onion, chopped

3 cloves garlic, minced

brown the meat, onion and cloves. If you’re going meatless or very lowfat meat then use a tbsp EVOO for the pan.

When the meat and/or the veggies are browned, add the following:

2 cups celery, chopped

2 cans (14oz ea) kidney beans

2 cans Campbell’s Cream of Tomato soup (or an equivalent amt of trader Joe’s Creamy Tomato (it has less salt)

2 cans diced tomatoes: I prefer the organic fire-roasted ones

bring to a simmer, then reduce to very low heat.  Add salt and/or pepper to taste. Let yourself be moved to add 1 tbsp of Italian Seasonings… or Herbes de Provence. The elements marry in about an hour and a half but this gem is good for days:-)  Enjoy!
